1 cup rice, 1/4 cup cooked rice, 1/2 cup grated coconut, 1 tsp sugar1/2 tsp salt, 1/4 tsp yeast, 1/2 cup water, 1/2 cup coconut water, ghee and oil as needed.

To begin with this easy recipe, wash the rice and soak 1 cup rice for 3 hours.

Meanwhile, take cooked rice and separate it using a fork.

Blend the soaked rice, cooked rice, grated coconut, sugar, and a little water to make a smooth batter. The consistency should be slightly thick, like pancake batte

If using yeast, dissolve it in warm water with a pinch of sugar and let it activate for 5�0 minutes. Add this to the batter. Add salt to the batter and mix well.

Cover the batter and leave it to ferment in a warm place for 8�2 hours or overnight until it rises and shows bubbles.

Heat an appam pan on medium heat. Lightly grease the pan with a little oil or butter.

Pour a ladle of batter into the center of the pan. Cover and cook for 2� minutes until the edges are crispy and the center is soft and spongy. Serve hot with coconut milk, vegetable stew, or curry.
